Cauliflower Pizza Sticks

DSCN2548This recipe is simple and quick to make. It is essentially Oleana’s recipe for Cauliflower Breadsticks, using frozen cauliflower rice instead of processing fresh Cauliflower. The first time I made this recipe I followed the instructions exactly. I learned that cauliflower smells very bad when it goes in the oven before draining the water. I loved the taste of the finished dish, but I did not want to experience that smell again. When I saw cauliflower rice in the frozen section of my health food store, I bought it hoping it didn’t smell awful when it was cooked. I was unsure too, about how to use it in a recipe.DSCN2545

I checked a few blogs listing cauliflower recipes. Authors wrote that frozen cauliflower was fine as a substitute for fresh, but none explained exactly how it should be used. I decided to follow the instructions on the bag and see how mushy the cauliflower turned out. I found the best length of time for heating the bag in my microwave was 4.4 minutes. DSCN2546I waited a few minutes before emptying the contents onto a towel. The cauliflower was still hot, so I forced liquid out of it by pressing it against the sink with the bottom of a cup. I estimate about one half cup of water drained from the cauliflower.

In comparison to fresh oven processed cauliflower, the frozen rice was the same. It wasn’t over cooked and best of all, there was no leave your place for 5 days smell. Great!

Cauliflower Pizza Sticks

Dry  Ingredients Wet Ingredients
1 tsp oregano
1/4 tsp ground black pepper
1/4 tsp sea salt
Frozen cauliflower (heated and drained)
Egg whites from 2 large eggs or 1/4 cup of liquid egg whites
1/2 cup shredded Parmesan cheese
1/4 cup of Chihuahua cheese
1. Mix all ingredients except Chihuahua cheese in a bowl.
2. Spread the mixture onto a pizza pan or cookie sheet lined with parchment. paper.
3. Sprinkle Chihuahua cheese on top of mixture.
4. Cook in a 450° oven for 10 – 15 minutes or until reaching desired brownness.
