This recipe was inspired by BJ’s Market Mustard-fried catfish; a food dish I purchased each time I visited Taste of Chicago in the summertime. My version is baked.

2 tablespoons French’s Mustard 1 teaspoon cayenne pepper |
1 tablespoon dry mustard 1 teaspoon parsley 3/4 cup cornmeal 1/4 cup flour 3/4 teaspoon sea salt 1/8 teaspoon cayenne pepper |
1 1/2 pounds fresh catfish pieces |
1. Put all catfish pieces in wet ingredient bowl and stir until all pieces are coated.
2. Dip in dry ingredient bowl, shaking off loose mixture.
3. Place on cookie sheet or shallow pan covered with parchment paper.
4. Bake at 425° for 25 to 30 minutes.
